For the month of July, I am focusing on improving my cooking and baking skills! This is a really fun one, because I love good food, and this gives me an excuse to eat really well. On July 1 I was able to go over to some friend's apartment and make them a wonderful soup, based on the Olive Garden's Zuppa Toscana.Â It was a great time of hanging out and eating together. I think that the social aspect of cooking is one of my favorite parts... I love hanging out with people, and everyone (that I know) loves eating!Â So what a better way to spend an evening than cooking for friends and getting to know them better! Here is the recipe to the soup: Ingredients: 1 lb ground hot Italian sausage 2 tsp crushed red peppers 1 large diced white onion 4 Tbsp bacon pieces 2 tsp garlic puree 10 cups water 5 cubes of chicken bouillon 1 cup heavy whipping cream 1Â½ lb cubed Russet potatoes (about 6 potatoes) 1/3 of a bunch of kale Directions: SautÃ© Italian sausage and crushed red pepper in a large pot. Drain excess fat, refrigerate while you prepare other ingredients. In the same pan, sautÃ© bacon, onions and garlic for approxiamtly 15 mins. or until the onions are soft. Mix together the chicken bouillon and water, then add it to the onions, bacon and garlic. Cook until boiling. Add potatoes and cook until soft, about half an hour. Add heavy cream and cook until thoroughly heated. Stir in the sausage. Add kale just before serving.
